Mề gà trộn cay hấp dẫn bởi cái giòn sần sật, mùi thơm và vị béo ngậy của mè trắng rang chín ắt hẳn sẽ khiến bạn không khỏi “vấn vương” ngay lần đầu thưởng thức.
Mề gà làm sạch rồi bóp với muối trắng. Sau đó tiếp tục bóp và rửa lại với nước cho sạch hẳn. Ngò rí rửa sạch, cắt thô.
Cho mề gà vào nồi luộc sơ cùng với vài lát gừng và 1 muỗng canh rượu trắng. Khi mề gà đã chín, vớt ra cho ráo.
Đun sôi một nồi nước khác với chừng 300 ml nước. Thêm hoa hồi, tiêu sọ, bạch chỉ, xì dầu, muối vào, khi nước sôi lại mới thả mề gà vào luộc tiếp trên lửa nhỏ. Sau khoảng 30 phút, vớt mề gà ra, để nguội trong tủ lạnh trong 24 giờ.
Mề gà lấy ra, cắt lát nhỏ vừa ăn, trộn đều với sa tế, mè trắng rang chín và rau ngò rí cắt thô.
