Bạn bóp chân gà với 1 chút giấm và muối, rửa lại cho sạch sẽ, để ráo nước rồi chặt bỏ móng chân gà, sau đó chặt chân gà làm 2 đoạn. Ớt, tỏi, sả đập dập và băm nhuyễn. Bạn lấy riêng 1 củ sả đập dập, thái khúc dài. Gừng thái lát mỏng.
Đổ nước vào nồi đun sôi, sau đó cho 1 chút bột canh, gừng, sả thái khúc vào. Tiếp theo thả chân gà vào luộc tới khi vừa chín là được. Vớt chân gà thả ngay vào tô nước đá lạnh, ngâm 10 phút cho chân gà được giòn, sau đó để ráo nước.
Bạn cho nước cốt chanh, nước mắm, đường, tương ớt vào 1 cái bát và khuấy đều cho tan, sau đó cho tất cả phần tỏi băm, ớt băm, sả băm vào trộn đều. Cho chân gà đã chín vào 1 cái tô và rưới phần nước mắm cay lên trên, sau đó trộn đều và đem cất ngăn mát tủ lạnh khoảng 2 tiếng cho ngấm gia vị, khi ăn bạn chỉ việc bày ra đĩa và thưởng thức.
